Vicky's Spaghetti
with Escarole,
Pine Nuts and Cherries



1/3cupdried cherries (or cranberries)
6tablespoonsextra virgin olive oil
1smallonion, chopped
10ozescarole, broken
6tablespoonspine nuts
..salt
..pepper
..spaghetti

Heat olive oil, saute onion until translucent. Add escerole, stir well to coat with oil. Add salt and pepper. Cover, cook over low heat, stirring occasionally for about ten minutes.

Separately boil pasta, drain. Add pasta and fruit to frying pan; cook 2 minutes. Arrange on a warm platter; sprinkle with pine nuts.

Can be reheated briefly in microwave.
