Hollandaise Sauce

4.egg yolks
1-2tablespoonslemon juice
1/2lbmelted butter (2 sticks)
1/4teaspoonsalt

In top of double boiler, beat egg yolks slightly and stir in lemon juice. Place over hot, not boiling, water -- don't allow water in bottom pan to touch top pan.

Add butter a little at a time, stirring constantly with wooden spoon. Add the salt and pepper to taste. Continue cooking slowly just until mixture thickens -- stirring all the time.

Makes 1 cup.

You don't make it often, but a little on asparagus is marvelous.

[Have used recipe that uses frozen butter to melt slowly. Look for that recipe.]
