Tricia's Tabbouleh without Onion

1/2boxcous cous
1-2.juice of lemons
1bunchfresh parsley, chopped (abt 1 cup chopped)
2bunchesfresh mint, chopped (abt 1 cup chopped)
2.firm tomatoes, chopped
1/4cupextra virgin olive oil

Soak cous cous for an hour in water and lemon juice.

Add to cous cous the chopped parsley, mint and tomato. Salt and pepper to taste. Add olive oil.
