SALAD


Pat's Italian Salad

2clovesgarlic, chopped
1-2tablespoonssalad oil
4.hardboiled eggs
1/2headlettuce
..tomatoes
1/2smallonion, coarsely chopped
1cupcanned green beans, drained - French cut preferred
..oil
..vinegar
..salt
..anchovy filets (optional)

Chop 2 sections of garlic into 1 or 2 tbsps or salad oil about 24 hours ahead of time.

Cut up lettuce, tomatoes and eggs coarsely.

Dressing:
Use 1 part oil to 2 parts vinegar and 2 parts garlic oil.

Salt, toss very lightly, garnish with anchovy filets (optional)

Add dressing just before serving. Makes a large bowl of salad.

This was given to me by a schoolmate whose father was a French chef from Corsica
