Mary's Pork Chops
with
Rice and Tomatoes

.	.	oil (optional)
.	.	chopped onion (optional)
4	large, thick	pork chops
.	.	Uncle Ben's original rice
1	large can	whole tomatoes, drained and juice retained
.	.	salt
.	.	pepper

If onion desired, sautee in small amount of oil in frying pan or electric fry pan until translucent.

Place pork chops in pan.

Cover completely with uncooked rice.

Place tomatoes evenly around chops, puncturing tomatoes to release liquid inside. Very carefully pour the reserved tomato liquid over all, so that all the rice has been wet but doesn't fall off the pork chops.

Cover and cook over medium heat for about an hour.

Rice cooks in tomato liquid.
