FISH
Lyn's Fish with Ginger Sauce
2 | . | scallions |
1/3 | cup | soy sauce |
1/3 | cup | chicken or veg broth |
1/3 | cup | water |
1/2 | teaspoon | sugar |
1 | teaspoon | cornstarch |
1 | teaspoon | water |
2 | tablespoons | corn oil |
3 | tablespoons | ginger, finely chopped |
1 | lb | firm fish (mahi mahi, swordfish, tuna, etc.) |

Preheat oven to 350 degrees.
Chop white part of scallions, cut green part julienne for garnish. Mix
soy sauce, broth, water and sugar. Mix corn starch with water and add with
scallions and ginger. Bring to boil to thicken and reduce. Keep sauce warm.
Season fish with lemon juice, salt and pepper. Rub with oil and place
in roasting pan. Roast for 15-20 min. Pour on sauce and garnish.
