Lemon Cheesecake

1pkgJello lemon pudding mix
2cupsmilk
18 oz pkgcream cheese
1.graham cracker pie shell

Squish cream cheese with a fork until it's soft

Blend in 1/4 of the milk, stirring until it's smooth

Add in the rest of the milk and the pudding mix

Beat with an egg beater for just a minute until everything's smoothly blended; don't over blend

Pour into graham crust and chill for 1 hour


If you must make your own crust, crumble 8 crackers (1 - 1 1/4 cups) into 1/3 cup butter and 3 tablespoons butter and press into pie shell. Opinions differ on whether to cook this for 8-12 minutes or not cook it at all.
